Masala Kraft is the brainchild of Chef Hemant Oberoi. The name refers to Masala inspired cooking and the associated craft of authentic dining rituals. Masala traditionally is a blend of spices either dried or mixed into a paste usually with garlic, onions or ginger. Renowned for its aroma it forms the basis for a great many Indian dishes, particularly within the Northern Indian culinary specialities.
Many of the most common Indian dishes incorporate Masala as an addition, to add flavor and scent. In Masala Kraft Restaurant however, Masala is raised to its natural level and forms the basis for dishes rather than an afterthought. Where thick butter, gravy and cream dominate other Masala dishes, at Masala Kraft extra virgin olive oils are used and in-depth culinary research helps to derive the right preparation techniques which bring out the best of the Masala spices.
A healthy alternative certainly, the Masala dishes at the Masala Kraft offer no compromise in taste or presentation. Signature dishes include Atta Chicken which has its origins from a tribal delicacy in the Punjab region, and Langarwali Dal, a perennial favourite created from mixed lentils. Hot fresh Indian bread, phulkas, straight from the phulka trolley, offer the perfect complement to any dish. Signature Mumbai Tiffins have also been created in recognition of the famous Mumbai Dabbawalah delivery service and include non-vegetarian Bohri and Parsi versions as well as a vegetarian option.
An essential component of any dining experience is the ambience and environment of the restaurant itself. Situated in the lobby area of the Taj Mahal Palace and Tower, a sumptuous dining environment is assured but it is also the style and rituals of dining which make the experience at Masala Kraft so authentic. The process begins with a hand washing ritual in brass receptacles and the central feature of the restaurant is the interactive kitchen counter with individual stations comprising vegetarian and seafood combinations. A selection of special wines can be suggested to complement any dish and enhance the dining experience
| Masala Kraft is open from 12.30am to 2.45pm for lunches and 7.00pm to 11.45pm for dinners. Reservations are strongly recommended. Attire is smart/casual and diners can expect the very best of attentions and service throughout.
